Ripe plantain puree








Ingerideints
  • 1/2 ripe plantain
  • 1 tespoon of unsalted butter
  • 100ml baby formular/ water

Peel and cut the plantain, put into a pot
Cook for about 10 minutes until the plantain is soft
Transfer to a food processor, add 100ml baby formula or water to the mix and blend untill smooth.

Add small amount of organic unsalted butter and serve.










Oat smoothie with pear and banana, for baby







Ingredients

  • 3 tablespoons of organic rolled oats
  • 1 ripe banana
  • 1 pear
  • 150 ml (~5 oz) baby milk or formular

Put everything in a blender and blend it until smooth.
Transfer into reusable baby drinking pouches. 
Stored in a refrigerator for later use

Honey Cashew Chicken with Rice






Ingredients
  • 2 chicken breast, cut into smaller pieces
  • 2 tablespoons of any cooking oil
  • 3 tablespoons of honey
  • 1 tablespoon of vinegar
  • ½  teaspoon of ground pepper
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 2 large snack pepper diced ( red and green)
  • 1 medium sized Broccoli branch
  • 100g cashew nuts (roasted)


Method
  • Heat oil in a frying pan on a medium heat
  • Place the chicken in the pan and fry for 3 minutes until golden brown
  • Add the diced vegetables and cashew nuts
  • Cook for 4 minutes until the vegetables are soft
  • Combine honey, soy sauce and oyster sauce  together, mix well and pour over the pan.
  • cook for 1 minute and serve with rice

Home made Pap (Ogi)








           
Most families in Nigeria make pap for breakfast. Pap is made from corn 
Growing up back home in Nigeria i was brought up with pap and i decided to make some for my baby so he can get used to the Nigerian/African cuisine. I have been wanting to make pap for a long time, and when i finally decided to give it a try last week, it turned out great.

Ingredients:
1 kg yellow dry  corn
Blender
Sieve / cheesecloth

Procedure:
  • Soak corn in water for 4-5 days until tender
  • Change the water every day
  • Blend the corn in a blender until smooth
  • Sieve corn to remove corn chaff
  • Let the liquid mixture settle for 3 hours
  • Pour out the excess water, the pap will settle at the bottom of the bowl
  • Transfer into a cheesecloth/ bag so the water can drip away
  • Pap can be stored in the refrigerator until you are ready to prepare it

How to cook dried red kidney beans


  • Remove dirt from beans
  • Soak beans in water overnight
  • Drain away the soaking water
  • Wash and cook in clean water for about 3 hours
  • Make sure there is a lot of water in the pot while cooking
  • Can be stored in the refrigerator or freezer

Making Fried plantain


  • Peel the plantains
  • Slice half a platain diagonally
  • Add pinch of salt
  • Pre-heat pan with oil/butter when hot add in the slice pieces of plantain 
  • Fry until tender and golden brown for about 2 minutes on each side
  • Serve with  fried eggs or tomatoesauce
