Organic homemade Quinoa flour


      

Quinoa is a gluten- free and contains huge amount of protein


It can be use to make bread, cookies, smoothies,pizza and baby cereal

Ingredients
1 cup of organic white quinoa
Directions
Wash the quinoa twice in a bowl of clean water.
Transfer it in a sieve and allow the water to drip away from the quinoa.
Heat a pan on a low heat, pour in the washed quinoa.
Roast the quinoa for 5-10 minutes untill golden brown.
Allow to cool then transfer into a blender/nutribullet.
Blend into a fine flour.


Can be stored in a container for future use.

Banana quinoa pudding for baby



Ingredients
1 cup white organic quinoa
1.5 ripe banana
2 tbsp of olive oil
1 teaspoon cinnamon
2 cups of water/formula.

Directions
Rinse quinoa in clean water to remove any dirt.
Place in a small pot, add water to cover and cook for about 15 minutes on medium heat.
When properly cooked add in the cinnamon, olive oil and banana, blend everything together using a hand held blender and serve.
It can also be served without blending, just mash up the banana with a fork.

Organic rice flour for making baby cereal 6-8 months


Ingredients
1/2 cup organic brown rice
1/2 white rice

Directions
Wash the rice twice in a bowl of clean water.
Transfer it in a sieve and allow water to drip away from the rice.
Heat a pan on a low heat, pour in the washed rice.
Roast the rice for 5-10 minutes.
Allow to cool down then transfer into a blender or nutribullet
Blend into a fine flour.


The flour can be used to make baby rice cereal and it can be store in a container for future use.

How to prepare Nigeria pap/Ogi/Akamu






Dissolve little portion of pap in cold water to form a smooth paste.
Add boiling water till it thickens, then stir the Ogi, if its too thick for your liking, add a few drops of hot water.
Serve hot with the sweetener of your choice, it can be sugar, dates or honey.


If you are serving some portion to your baby i suggest you use pear or apple puree.

To obtain the pink/red color, just add a few drops of Ribena juice concentrate.

Burger sold at a charity auction in Dubai for $10,000




A juicy burger was sold at a charity auction in Dubai for $10,000
The giant burger contained seven kinds of beef patties, one for each of the emirates in the united Arab Emirates, aged cheddar cheese and veal bacon strip in a saffron brioche bun.
The burger was prepared by Russell Impiazzi, culinary director at Le Gourmet in Dubai and a member of Qatar's royal family
The proceeds from the charity auction went to breast cancer awareness.

Beetroot pancakes










Ingredients
1 Cooked beetroot
1/4 Cup of organic rolled oats
1 Ripe banana
1 Teaspoon baking powder
1/2 Glass water
Butter for frying



Directions
Mix all ingredients together.
Blend it in a blender until smooth.
Heat butter on a frying pan, add full ice-cream scoop of the batter.
Fry on medium heat for approximately 1-2 minute on each side until golden brown.
Serve with whatever you like, i like mine with fresh berries or fruit.

1/3 Cup of rolled oats
1 Teaspoon of baking powder
1 Egg
15 Leafs of fresh spinach
1/2 Glass sweet milk
1 Tablespoon sugar
1/2 Ripe banana
Butter for frying


Directions
Mix all ingredients together.
Blend it in a blender until smooth.
Heat butter on a frying pan, add full ice-cream scoop of the batter.

How to make Nigerian Moi-Moi using bean flour( Baked Beans pudding)






Ingredients
2 cups beans flour
1/2 onion
1 mackerel fillets in tomato
2 boiled Eggs
1/3 knorr cubes (or maggi)
1 teaspoon nutmeg
2 tablespoon of olive oil
3 pieces of dried pepper

Directions:
Blend the beans, flour, onion and pepper together in a blender and
pour into a bowl
Add, mackerel fillets, nutmeg, seasoning cube, oil and salt to taste
stir properly
pour in a baking mold
Add sliced boiled eggs on top of the Moi-Moi
Preheated oven to 200C and place a container with water inside to avoid drying out your Moi-Moi.
Once the oven is preheated, bake your Moi-Moi for for 15 to 20 minutes.

Ripe plantain puree








Ingerideints
  • 1/2 ripe plantain
  • 1 tespoon of unsalted butter
  • 100ml baby formular/ water

Peel and cut the plantain, put into a pot
Cook for about 10 minutes until the plantain is soft
Transfer to a food processor, add 100ml baby formula or water to the mix and blend untill smooth.

Add small amount of organic unsalted butter and serve.










Oat smoothie with pear and banana, for baby







Ingredients

  • 3 tablespoons of organic rolled oats
  • 1 ripe banana
  • 1 pear
  • 150 ml (~5 oz) baby milk or formular

Put everything in a blender and blend it until smooth.
Transfer into reusable baby drinking pouches. 
Stored in a refrigerator for later use

Honey Cashew Chicken with Rice






Ingredients
  • 2 chicken breast, cut into smaller pieces
  • 2 tablespoons of any cooking oil
  • 3 tablespoons of honey
  • 1 tablespoon of vinegar
  • ½  teaspoon of ground pepper
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 2 large snack pepper diced ( red and green)
  • 1 medium sized Broccoli branch
  • 100g cashew nuts (roasted)


Method
  • Heat oil in a frying pan on a medium heat
  • Place the chicken in the pan and fry for 3 minutes until golden brown
  • Add the diced vegetables and cashew nuts
  • Cook for 4 minutes until the vegetables are soft
  • Combine honey, soy sauce and oyster sauce  together, mix well and pour over the pan.
  • cook for 1 minute and serve with rice

Home made Pap (Ogi)








           
Most families in Nigeria make pap for breakfast. Pap is made from corn 
Growing up back home in Nigeria i was brought up with pap and i decided to make some for my baby so he can get used to the Nigerian/African cuisine. I have been wanting to make pap for a long time, and when i finally decided to give it a try last week, it turned out great.

Ingredients:
1 kg yellow dry  corn
Blender
Sieve / cheesecloth

Procedure:
  • Soak corn in water for 4-5 days until tender
  • Change the water every day
  • Blend the corn in a blender until smooth
  • Sieve corn to remove corn chaff
  • Let the liquid mixture settle for 3 hours
  • Pour out the excess water, the pap will settle at the bottom of the bowl
  • Transfer into a cheesecloth/ bag so the water can drip away
  • Pap can be stored in the refrigerator until you are ready to prepare it

How to cook dried red kidney beans


  • Remove dirt from beans
  • Soak beans in water overnight
  • Drain away the soaking water
  • Wash and cook in clean water for about 3 hours
  • Make sure there is a lot of water in the pot while cooking
  • Can be stored in the refrigerator or freezer

Making Fried plantain


  • Peel the plantains
  • Slice half a platain diagonally
  • Add pinch of salt
  • Pre-heat pan with oil/butter when hot add in the slice pieces of plantain 
  • Fry until tender and golden brown for about 2 minutes on each side
  • Serve with  fried eggs or tomatoesauce
